Kanji is a popular dish all over the Far East, China, Japan, etc and Tamilnadu and Kerala. What is the oldest reference to Kanji in Tami literature? Did the word go from Tamil to Japan, China, etc. or is it the other way around

' கஞ்சி ' என்ற சொல் பயன்பாடு சங்க இலக்கியத்தில் உண்டு. ஆனால் அது சோறு ஆக்கி வடித்ததையே குறித்தது. 

"சோறு ஆக்கிய கொழுங்கஞ்சி 
ஆறு போலப் பரந்தொழுகி" - இங்கே சொல்லப்படும் கஞ்சி;  வடிகஞ்சி ஆகும். 
 
இப்போது நாம் பருத்தித்துணிகளுக்குக் கஞ்சி/பசை  போடுகிறோம். அது சோற்றுக் கஞ்சியோ அல்லது ஜவ்வரிசிக் கஞ்சியோ......
பண்டைத் தமிழகத்தில் அது 'பசை' என்று மட்டுமே அழைக்கப்பட்டது.  
"பசைவிரற் புலைத்தி" என வரும்.

வடிக்காத சோற்றைக் கஞ்சி என்று சொல்லும் வழக்கு இன்றும் உள்ளது. 

மழை வேண்டித் தாய்த்தெய்வத்திற்கு எடுக்கப்படும் வழிபாட்டில் தவணக்கஞ்சி காய்ச்சுவர். இது இனிக்கும்.

என்னுடைய ஆய்வுக்கட்டுரை ஒன்றில் கஞ்சி பற்றிய குறிப்புக்கள் உள்ளன. நான் பணியாற்றிய கல்லூரியில் hotel management துறை இருந்தது. அத்துறையின் தலைவர் துணையுடன் கஞ்சி பற்றிய செய்திகளைத் தொகுத்துத் தமிழ்நாட்டுச் சோறு வகைகளுடன் வடிவமைத்த கட்டுரை.

Falafel and Paruppu vadai are very similar. Did falafel become paruppu vadai or paruppu vadai become falafel? Is there any reference to paruppu vadai in Tamil literature before the arrival of Ghazni?

I am also wondering about rice. Why is rice not the staple food of North Indians if rice travelled from North to the South? Is it because the North Indians of today are not the same as those when rice was cultivated in the plains of the Ganges or is there some other reason?

I don't know about falafel. 
But paruppuvadai is got from the 'payaru' varieties i.e. leguminaecae family; which in turn is called avarai in early Sangam Literature by Mangudi kizhar. 

He also adds that it is one among the four basic foods of the திணைமாந்தர். 
In the anthologies we come across உளுந்தங்களி.

எண்ணெயில் உணவுப் பொருட்களைப் பொரிக்கும் வழக்கம் இருந்தமைக்கும் சான்று உள்ளது. 
இறைச்சியை உப்புக் கண்டம் போட்டு வறுத்து உண்டமைக்குச் சான்று உள்ளது.

Falafel (image attached) recipe is very similar to paruppu vadai (aka masala vadai) and is made from Channa dhal (the lighter skin one), onion, coriander leaves, salt, pepper, garlic,coriander powder (some ingredients are different) , but it is ground some more and tastes almost the same but is not crisp like vada since it is rounder. Attached is an image of falafel. If vadai is never mentioned in sangam lit, then could it be that it came with the Turks and the Arabs ?

அரி என்று தமிழிலும் அரிசிக்குப் பெயர் உண்டு. பள்ளு நூல்களில் காணலாம். எட்வர்ட் சொல்வதுபோல், நெல்லம்புல்லின் சேர்க்கைக்கும் (= கதிர்க்குவியல்)  அரி என்ற பெயர் உண்டு. ஜப்பானின் செய்யும் நெல்லங்கள் ஸாக்கே. இதேபோல, சங்கத் தமிழர்கள் அரிக்கள் செய்தனர். அதற்கும் அரி எனத் தான் பெயர் (பிங்கலந்தை). நெற்கதிருக்கும் அரி எனப் பெயர் (பிங்.). கதிர் அறுக்கும் பருவத்துக்கும் அரி என்ற பெயர் உண்டு (பெரும்பாணாற்றுப்படை 202). அரி என்னும் தோப்பிக்கள் வழிபாட்டில் (நாட்டார் தெய்வம்) - தேவர் ஜாதியில் என்பதாக நினைவு - வெ. வேதாசலமோ, யாரோ ஓர் அரிய கட்டுரை “ஆவணம்” ஆய்வேட்டில் வந்தது. படிக்கவேண்டிய கட்டுரை. ஆவணம் இதழ் இணையமேற வேண்டும். oryza என்று அரிகி/அரிசி கிரேக்கத்துக்கும் சென்ற சொல்.

அரி என்றால் அரிசி என்று பிங்கலம் மட்டுமில்லை. சங்க இலக்கியத்தில் இருந்தே தரவுகள் கொடுக்கப்பட வேண்டும்.

வரி என்பது சங்க இலக்கியத்தில் எங்கே நெல் என்று தேடுகையில் (உ-ம்: மகாவித்துவான் ச. தண்டபாணி தேசிகர், நீ. கந்தசாமிப்பிள்ளை, மால்ட்டன், இணையத்தில் பாண்டியராசா) அரி என்பது ஆயப்பட வேண்டும்.

வரி என்பதா என ஆராய்தலும், வடவிருட்சம் என்னும் பொருளில் ஆல் எனப் பிரிக்கும்
இடங்கள் யால் என உள்ளதா என்றும் பார்த்தல் அவசியம்.

ஆல் என்பதை, வேதத்துப் பெருமரம் என்று உரைக்கலாம்.
அப்போது, ஆல் ஆரல் என்று பொருள்கூறத் தேவை யில்லை.
கொடிநிலை, கந்தழி, வள்ளி  (வானின் யால் உருவகம்)

கி.மு. 2500-ல் கார்த்திகை, துருவ நக்ஷத்ரம் பற்றிய பாடல்.
பின்னர், Precession போன்றவற்றால் மாறுவதால், வானின் பெருமரம் (யால்/ஆல்)

இம் .. இது வேறா?
இனி ஒரு இழையில் தொடர்ந்து நாலைந்து பதிவுகளாக முனைவர் கணேசன் பதிவாக வந்து கொண்டிருந்தால்.. 
நான் அது அவர் வழை என முடிவு காட்டாமல்,
யார் துவக்கிய இழையையாவது தொடர்பில்லாத தனது செய்திகளைக் கூறி  ஹைஜாக் செய்து கொண்டிருக்கிறாரா  என்று கவனிக்க வேண்டும் என்று நினைவில் கொள்கிறேன். 
அவர் இழையில் எவருடைய கருத்தாவது  சற்று விலகினாலும் அவர்களை அடுத்த இழைக்குப் போகச் சொல்வார்,

நற்றிணைப் பாட்டில் (58), செ + அரிப்பறை என்றே பிரிப்பர். செ+வரி = செந்நெல் என்பதும் பொருந்துகிறது என்கிறார் கண்மணி. ஏற்கலாம்.
வ், ய் என்பவற்றை உடம்படுமெய்களாகக் கொண்டு வரியை (நெல்) அரி என்றும், யால மரத்தை ஆல மரம் எனவும் பிரிக்கும் இடங்களைக்
கூர்ந்து நோக்க வேண்டும். மொழியியலால், யால் என்பது ஆல் மரத்தின் முந்து-த்ராவிட மூலச்சொல் எனக் காட்டியுள்ளேன் (25 ஆண்டாய்).

கி.மு. 2500-ல் கார்த்திகை, துருவ நக்ஷத்ரம் பற்றிய மிக அரிய பரிபாடல். பின்னர், Precession போன்றவற்றால் மாறுவதால், வானின் பெருமரம் (யால்/ஆல்) மறந்துவிடுகிறது. நம்மாழ்வார்
சங்கம் வென்ற அகவலில் வரும் பெருமரம் இந்த யால்/ஆல் மரம். வேத கால வருணனைப் பற்றியது. தொல்காப்பியர் தரும் கொடிநிலை, கந்தழி, வள்ளி சூத்திரத்தில் இருப்பது.
பிற்காலத்தில் (வானத்தில்) ஆல் என்பது என்னவெனப் புரியாததால், ஆரல் என உரைகூறத் தலைப்பட்டனர்.

'செவ்வரிப்பறை' = செந்நெற்பறை என்று கொள்வதில் தயக்கமும் இல்லை; வியப்பும் இல்லை. 

ஏனெனில் முல்லையில் 'ஏறுகோட்பறை' , நெய்தலில் 'மீன்கோட்பறை' போன்ற பறைகள் எல்லாம் ஏற்கனவே சொல்லப்பட்டுள்ளன.

வா- வாகு எனவும் வரும். வாகான உடல். சக்கரவாகம் - இமயமலையை அன்னம் (bar-headed geese) போல கடக்கும் ஒரு தாரா. இந்தியாவின் தேசியக்கொடியின் நிறங்கள் இந்த பிராமணி டக்குக்கு *duck* இயற்கையாகவே உண்டு. சக்ரவாகம் என்பது சக்ரவாளம் எனவும் வரும். வாகம் = வாளம் < வளை- சக்கரம் போல் உடல் வளைந்துள்ள தாராப்புள் = சக்ரவாகம்.

சே+ ஆ = சேதா, மூ+ஆ = மூதா, இதேபோல, பே (அணங்கு) + உறு = பேதுறு-. பேதாளம் > வேதாளம். அணங்கைக் கட்டுப்படுத்துவோர் = வைதாளிகர் என்னும் பாணர் வகுப்பினர். பேது- > ப்ரேத (சவம்,  சவம் < சாய்தலான்). இதேபோல, வளைதல் என்பதன் பொருள் கொண்ட வா- தாது தருவது வாது. மரக்கிளை = வாது. (வளைந்திருப்பது).

அரி < வரி. வரிப்பறை நற்றிணையில் இரு பாடல்களில் வருகிறது. இந்த வரிப்பறை
அரிப்பறை என்றும் வரும். இங்கே, அரி என்பது அரிசி தான். அரிக்கிற
“scratching, rubbing, sawing as itch" ஓசை என்பது பொருந்துவதில்லை.

இங்கே, அரிபறை என்பது வரிப்பறை எனப் பொருள் கொள்ளவேண்டும். அதேபோல,

இங்கும், அரிப்பறை = நெற்பறை. அரி < வரி.

காரணம்: வரிப்பறை/அரிப்பறை என்பது கிணை (Kettle Drums). ஆசியா முழுதும்,
நெல் அறுவடைக் காலத்தில் ஒலிப்பது. குணிலால் அடித்து முழக்கும் பறை.
தேய்ப்பது அல்ல.
அரிகிணை ari-kiṇai , n. < id. +. An ancient drum used in harvest time;
கிணைப்பறை வகை. மள்ள ரரிகிணைக் கிசைய வூதும் (அருணா. பு. திருக்கண்பு.
45). அரிகிணை = அரிபறை. (அரி/வரி = நெல்).

காய்ச்சுதல் என்ற வினையடிப் பிறக்கும் பெயர்ச்சொல் கஞ்சி. தூய தமிழ்ச்சொல் இது. ஊர்ப் பஞ்ச காலங்களில் கஞ்சித்தொட்டி வைத்து ஊற்றுவர். இக் கஞ்சித்ட்தொட்டிக்குக் கஞ்சணம் எனப் பெயர். கஞ்சணம்பட்டி இன்று கஞ்சம்பட்டி ஆகிவிட்டது. 30 ஆண்டு முன் புலவர் செ. இராசு அண்ணனை அங்கே அழைத்துச் சென்றேன். நிச்சயம் தமிழ்க் கல்வெட்டுகள் இங்கே இருக்கும் என்றார். கஞ்சணம் போன்ற குழிவை ஏற்படுத்தி சமண முனிவர்கள் பாறைகளில் தங்கினர். ”காஞ்ச மாடு கம்பங் கொல்லையில் பூந்தமாதிரி” பழமொழி. இதனால், கஞ்சம் என்றால் வெங்கலத்துக்கு வடமொழிப் பெயர். காய்ச்சி வார்த்து எடுப்பது கஞ்சம். வெண்கலப் பாண்டில் ஓர் கஞ்சக்கருவி. இது போன்றது பகன்றைப் பூ. இதுபற்றி ருத்ரா ஒரு கவிதை செய்துள்ளார். காளை மாடுகள் காயடித்ததும் வெண்மையாகி விடும். அதன்பெயர் எருது. நிறம்பற்றி வந்த பெயர் பாண்டில். எருதுகள் பூட்டி இழுக்கும் வண்டியின் பழையபெயர் பண்டி. பண்டி > வண்டி. பாண்டில்விளக்கு என்பது இருந்தது. 20-ஆம் நூற்றாண்டுக் கடைசியில் மறைந்துவருகிறது.

அறிவியலில், (Biology ...) பயன்படும் தமிழ்ச் சொற்கள், த்ராவிட வார்த்தைகள் தொகுக்கப்படவேண்டும். Dravidian kinship : மாமன், அத்தை ஸிப்லிங்ஸைக் கட்டும் முறை உலகில் எங்கே இருப்பினும் த்ராவிட கின்ஷிப் முறை என்பதுபோல, கஞ்சி பொதுச்சொல் ஆக உலக உணவுவகையில் ஒன்றாகிவிட்டது. 19-ம் நூற்றாண்டில் தமிழர்கள் பர்மா, மலாயா, இந்தோனேசியா, வியட்நாம் தமிழ்நாட்டுக் கஞ்சி செய்முறை பரப்பினர். அங்கே எல்லாம் புலாலுணவுடன் செய்முறை தமிழ்க் கஞ்சிக்கு முன்னரே உண்டு.

ஹாப்ஸன் - ஜாப்ஸன் அகராதி பார்த்தேன். Congee உலகில் பரவலாகும் காலம் தெரிகிறது.

Here I mentioned instead of aakkiya, it's really vaakkiya. I think because of Sanskrit words like vaakkiyam
we have forgotten about vaakkutal/vaaGkutal pair of verbs.

One good thing is Prof. Kanmani now writes in Vallamai also. That is great and useful.

There is one institutionalized Congee in Tamil Nadu and Kerala.Called as "Nonbu Kanji", it was developed in 1948 by Pulavar Asan Mohideen, a restaurant owner in Burma, and started in his home town, Shenkottai mosque. Soon, men and children who arrive for their evening prayer, will sit down for their first meal that breaks their day-long fast. Nombu kanji or the fast porridge, is precious.

It is served warm at the Big Mosque all through the month of Ramzan. According to Fayaz — the darban (maintenance in-charge) — his team makes enough for over 1,200 people a day. “This comes up to 60 kilograms of kanji,” he observes. “And on Fridays, up to 3,000 people come to the mosque to pray.” The preparation starts at 7 am. “Four men make the nombu kanji on a wood-fired stove within the mosque’s premises,” explains Fayaz.

“The main ingredients are jeeraga samba rice, toor dal, onions, tomatoes, carrots, beans, pudina leaves, ginger, garlic, spices such as cinnamon and cloves, chilli powder, coriander powder, and salt,” he adds. The spices and vegetables are sautéed in oil in a mammoth cauldron; after the masalas are added, the rice and dal are introduced. The porridge is flavour-packed. Fayaz adds that the men also sprinkle a dash of chicken masala in it. “During the one month that we make it, we add mutton on four occasions, namely on the 15th, 21st, 27th, and 28th days of the fast, ” he adds.

Fayaz has been in-charge of maintenance at the mosque for 17 years now and he says that the nombu kanji’s recipe has remained the same ever since the mosque came into existence, over 200 years ago. “It remains in dum until it’s time for the evening prayers,” explains Fayaz. “We start scooping it into bowls and arrange them at around 5.30 pm.”

While a lot of people come to the mosque to break their fast, some, like Ghias Ahmed Baig, who owns Sana Burkha House opposite the mosque, sends someone to fetch some kanji for him in a steel tiffin box. For him, the nombu kanji is nothing short of heaven. “It’s the ideal food to break the fast,” he feels. “The warm liquid is easy on the palate and the intestines. Since we don’t drink even a sip of water through the day, our throats are parched, and drinking the kanji is soothing.” Ghias will not trade this dish for anything. “Not even mutton biryani,” he laughs.

Ghias, who opened his shop in 1986, has been having the nombu kanji during Ramzan, every year till date. “Some 20 years ago, the kanji was served in mud pots at the Big Mosque,” he remembers. “But as years went by, they switched to stainless steel, and then, reusable plastic.”

A little after 6.30 pm every day, when it’s time to break the fast, shops around Triplicane come alive with conversation. “All the shopkeepers sit together to eat our warm kanji,” says Ghias. The fragrant porridge is easily accessible to everyone, irrespective of religion. One simply has to be in Triplicane at the right time to try it. “What time are you coming?” asks Ghias as our conversation comes to a close. “Come to my shop; I will keep some aside for you.”

Dear Dr. Ganesan,
Was there no word for this in Tamil?  If every other word is borrowed from Sanskrit, what is left of Tamil? Was there ever a language called Tamil (without all the Sanskrit words)  that was worth anything? 

I remember reading somewhere long ago(I thought that was written by you, but I may be mistaken)  that Sanskrit borrowed words from Tamil, but now it looks like the tables have turned.

we have not borrowed the word 'வாக்கிய' from other language. 

It's meant that; as there are similar words like 'வாக்கியம்' borrowed form sanskrit: the Tamilians did not use the phrase 'சோறு வாக்கிய' in the course of time. 

But the word is still alive in the phrase 'வாக்கப்பட்டா'.

Would that phrase not mean வாழ்க்கை  பட்டாள்  since we have usages like வாழ்வு கொடு, எப்படி பட்டவர், etc.

Dear Dr. Ganesan,

What about the word வார்ப்பு which refers to a big cooking vessel used in weddings, also used for moulding something, pouring something, etc.  This  usage is found in some parts of Tamilnadu and in Malayalam.

வார்ப்பிரும்பு (Cast iron)  அது தயாரிக்கும் முறையைக் குறிக்கும் ஒரு சொல் மட்டும்தான் என்றல்லவா எண்ணியிருந்தேன். 
அது இவ்வாறு சொற்புழக்கத்தில் பயன்பாட்டிற்கும் வருமா !!!!!

வார்ப்பிரும்பு, தேனிரும்பு, எஃகு என்று பள்ளியில் அறிவியல் வகுப்பில் இரும்பின் வகைகள் குறித்துப் படித்தது இன்றும் நினைவில் உள்ளது.
