Weekend Cook and Tell Round Up: Grilling Minus the Meat

Last week we asked all of you to share your meatless grilling recipes for our Weekend Cook and Tell. Judging by all of the wonderful responses it seems like all of you are taking good advantage of your grills for much more than just burgers and dogs. Let's take a look at some of our favorite meatless grillables.


hmw0029 grilled up two vegetarian pizzas over the weekend, one topped with beet greens and caramelized onions and another with homemade pesto, grated Grana Padano, zucchini from the CSA, and tomatoes from hmw0029's garden.



Fweety's favorite summer side is thick sliced grilled tomatoes topped with Parmigiano Reggiano and some very tasty-sounding tarragon pesto.



dbcurrie put her entire haul from the farmers' market on the grill, including yellow squash, onion, zucchini, baby red potatoes and Yukon golds. The leftovers made a great lunch the next day placed on flat bread and topped with a dollop of Greek yogurt.

strawberrypepper made these strikingly beautiful Bean Barley Beet Burgers. They held up surprisingly well on the grill, and had a nice chewy-crunchy texture from the combination of beets and barley.



dhorst grilled up a storm this past week. On the menu were Za'atar Seasoned Grilled Zucchini Slices that found their way on to this Germany, Lebanon and Italy Meet Over Pizza ...

This note reminded me to share my favorite recipe for a grilled portobello mushroom sandwich: http://www.drbenkim.com/grilled-portobello-mushroom-burger.html

I served it on a Kaiser roll and added a nice slab of smoked Tillamook chedder (for the nonvegans). Do include the basil-lemon pesto - it really makes the sandwich shine! If you don't have a grill handy you can get pretty good results by sauteing the mushroom caps in olive oil as well.

Anyone else have some good ideas for vegetarian grillables? I'd love some new ideas for stuff to bring to barbecues beyond the usual Field Roast sausage and mustard (not that there's anything wrong with that).
