Does anyone have knowledge of how these two bikes stack up against one another? I know "longer chain stays" but what does that really mean?

I seem to recall that the chain stays are a bit longer on the Cheviot. But not much.

I own a 60cm Betty Foy and 60cm Cheviot and the biggest difference I note is the Cheviot just feels like a bigger bike. The chain stays are notable longer and so is the head tube so it's easier to get the bars even higher if need be. I originally purchased the Cheviot for my wife and a 58cm Sam Hillborne for myself, however I sold the Hillborne and purchased Miesha's personal Betty when it came up for sale last year. It's really hard to tell if the Cheviot rides much different than the Betty but other people who have visited and ridden both note the Betty feels a little lighter.
