so i bought some nice vertical hanging hooks like THIS for the garage. they seem solid and well made, the only thing is that getting a wheel with a tire over 2 inches in/out is nightmarish. anyone know of a sturdy hook that can accomodate a larger tire?

If you already have them, I would recommend bending it to accommodate your tire.  Buy a can of plasti-dip if you end up sacrificing the rubberized covering.

The first bend I would consider would be pulling the hook more perpendicular to the wall.  Like this one:  different hook

At the angle you show, I imagine with fat tires, that hook would get tangled up with the adjacent spokes.  Having the hook a lot more perpendicular to the wall would make it more parallel with the spokes, making spoke interference less of an issue.
