Can anybody advise? I use a Note 9 and the problem happened at the same time on an older phone, so I deduce it is a connected either to an MLO update or a Google Assistant update.

Hi Domas. The OK Google function of MLO 3 is a way of waking up the phone and taking a note which is sent automatically to the MLO Inbox. This stopped happening and the Notes are being stored in the phone stock Notes system instead.

I'm also on 8.1.0 It seems to have lost its record of the default note taking app and there seems no way to change it. I have the same problem and have been unable to find a solution so far. Android keeps dropping the note into what appears to be a Google web app and won't pass the string to MLO.

CHANGE DEFAULT NOTE APP
Here’s what you need to do to change the default app on Google Assistant.
Step 1: Launch Google Assistant by saying the command Ok Google or by holding the home button. In case the Ok Google command isn't working for you, try these solutions.
Step 2: Say the command ‘Note to self’ or ‘Create a note.’
NOTE: You are only supposed to say the command. Don’t speak anything after that and wait for the Assistant to respond.

Step 3: On the screen that appears, tap on the Note to self option. I know it's not an intuitive button, but that's how Google offers it.
Here you will find all the supported apps. Tap on the app that you want to use and it will become your default note-taking app through Google Assistant.


SWITCH AMONG NOTE APPS
As you know if you say the command Create a note or Note to self, followed by the note text, it will be saved in the default app. At times, you would want to add notes directly in other apps too without going through the above steps.
To do so, launch Google Assistant and give the command, ‘Create a note in Evernote’ or ‘Evernote to open a note to self.’ Replace the word Evernote with the name of the app that you want to use.

If I invoke by tap I'm able to choose the default app which is already set to MLO.
Google has changed some thing with Assistant recently. This was working when invoking by voice and I didn't used to see a difference between voice and touch.
I was researching this earlier today and came across an article that said there are actually four different versions of Assistant currently and each behaves differently.
Alas the steps on that webpage don't work on my phone (Note 9).
Not did the Google search you suggested elicit a solution. I am inclined to think it's a bug in Google Assistant which will hopefully go away in due course.

I agree. This isn't an issues with MLO. Google seems to have implemented Assistant into numerous products at different levels. Hopefully they're working toward a standard implementation and UX.
I don't know what widget is being suggested, but my practice was, before it stopped working, to say Hey Google Take A Note while the phone was in my pocket. If I have to open the phone and tap a button, I might as well use the MLO widget which was my practice before MLO was updated.
