Is anyone using the CSA list this year? I haven't seen anything this spring…
Regardless, thought I would share a use for those many, many bulbs of Kohlrabi we get in our boxes… I always have trouble coming up with things to do with it before the last few bulbs need to be ditched (speaking of which, any ideas for celery root??). We made hamburgers a couple weeks ago, and everyone had a hankering for coleslaw. Alas, we didn't have any cabbages in the house. It turns out that kohlrabi shredded in the food processor makes a great coleslaw. Keeps its crunch much longer than cabbage, and its mild flavor goes well with the slightly sweet dressing. I just used it in place of the cabbage in my favorite coleslaw recipe, and it was great!
Based on a recipe for "Corky's Coleslaw" I found on the net:
2 Large bulbs Kohlrabi: Peel and shred with your largest disc in the food processor (or hand grater)
1-2 medium carrots (or 5 small): Peel and shred same as the Kohlrabi.
Dump into a bowl, and swap your shredding disc for the blade. In goes:
1 cup mayonnaise (The food pro is out; why not make it fresh?)
1/8c cider vinegar
1/8c dijon mustard
1/2 bell pepper, diced
1/2 medium onion, diced
1 tsp salt
3/8c sugar
1 Tbsp Celery seed
Pinch pepper
NOTE: This is 1/2 the dressing recipe for a whole cabbage
Spin it up until the veggies are diced fine and everything is mixed, then dress and toss the coleslaw. Refrigerate for a couple hours before serving.
Simple, easy, and gone fast.
