Do Bramley apples make decent apple juice ?

Think about it. Do you personally find fresh Bramleys good to eat? Nice
sugar / acid balance? Plenty of interesting flavour? Probably not. And
making them into juice doesn't change their fundamental character.

As a pointer, most people find fresh Bramley juice far too acidic to
enjoy. After Christmas, when the acid has dropped a bit by respiration,
they do make a more balanced juice. By the following June, the acid has
dropped even more but the juice tastes rather like potato peelings.

Your choice. Some people will like it; most won't. IMHO.

Hello Andrew,

I was just looking for you book online; found one for over $4000 on abebooks.com!!! I have what I'm fairly certain are Bramleys and previous attempts at cider have been a little tart. Is there anything I can do, e.g., add tannin, to make a decent hard cider from these apples? Thank you!

I don't think it's that good! It is out of print till next year but
there are still a few copies around much cheaper than that!! If you
still cannot find one contact me off-list for workarounds.

I know some Bramleys have been grown as speciality fruit near Victoria
but they're not usual in North America. Tartness has been addressed in

But no, tannin will not help you make a silk purse out of a sow's ear!

Hi Neil. Bramleys may not make a decent juice or cider, but I reckon they are very good at blending with other sweeter dessert fruit, and you may find it hard to beat a Bramley cox blend for a cracking apple juice. Try Jonagold also. 
As for cider, to get your acidity up or ph down, Bramleys are good for that. No need for malic acid then. 
So, in summary, on their own, no, but I combination yes.

I make and sell apple juice from 100% Bramley apples. Most people prefer my sweeter juices, but some do expressly seek out the tart bramley juice!

Living about 10 miles from Victoria as the crow fly's some of the old San Juan Island orchards dating back to the 1870's have Bramley's or a close relative. They make a good tart fresh juice but for cider I would suggest you find something else to blend them with and see what you come up with.

Sorry. Should have said that for that price it will be a first edition with very few apple juice stains, signed by the author and with a little picture of Andrew (when we met up at New Forest Cider a year or two back)

I don't think signing it will increase the price actually!

This entire nonsense is a consequence of the automated algorithmic
pricing now being used in the book trade. No human beings are involved
and there are no 'sanity checks'. There is quite a good article about it

I disagree.  Your book is well worth that, although I am now able to sell mine for as little as $1995.98, a saving of $4 compared with JezH, a well-known profiteer within the book trade, and to be avoided at all costs!

Andrew I bought a bunch of your books a year or 2 ago, to sell to people as
an easy way out when I get asked how to make cider! I'm sure I have a few
left somewhere, looks like I might be sitting on a gold mine!

It would seem, David, that it is your stock piling that is driving prices to their dizzying heights.  It is a good tactic but you have been outed!  I have sent an email to the relevant authorities with the words "insider trading" in the subject line.
