Art - what part of India and for how long? It's a pretty big country and travel around the country isn't exactly quick or easy in many cases. I have no firsthand experience, but have read up quite a bit on it. Masheer is the "big" fish that people often travel to India to catch. A lot of the Himalayan streams have brown and rainbow trout stocked too, I'm sure some have developed self-sustaining populations. The next few months is monsoon season, which can make the fishing pretty difficult in some of the rivers, but I don't know enough about that and how different regions are impacted to give solid advice.
If you're game to travel around a little bit - which it sounds like you are give the Maldives note - I'd hit the Seychelles instead of Maldives. Travel time shouldn't be TOO much longer depending on the airport/location you'll be based in. In fact, if you're in Mumbai, there's even a direct to Seychelles. Lots of Giant Trevally, Bonefish, and Indo-Pacific Permit. If you want offshore fishing, the Andaman Islands would be a pretty good choice, but you probably won't be able to fly fish much.
