Does a mathjax gui equation editor exist?

There are lots and lots of document editing programs that will output excellent quality LaTeX. 

Does there exist an editor that allows me to push into the LaTeX equation to 1) annotate variables, 2) assign numerical values to variables, and 3) facilitate numerical calculation of the formula?

For example, it would be nice to obtain a LaTeX formula and then click on the variables and assign values to the unknowns and then calculate the unkown variable.

Does anything like this already exist?

MathJax is a display engine, not a computation engine.  So while it can typeset the equations you are working with, it does not have the means of evaluation mathematical expressions to compute their values.  That would require a computer algebra system (CAS), and there several javascript-based ones that you could use (see, for example, mathjs.org).  MathJax does have the ability to assign ID attributes to its output so that you could attach event handles to subexpressions, but you would have to do the programming to perform the actions you want using the CAS in combination with the MathJax output.  

I am not aware of an existing system that does what you want.
