There's a group of folding-related menu commands on the View menu, some of which may be useful. (And any of those may be assigned keyboard equivalents in BBEdit's "Menus & Shortcuts" preferences.)

Indeed. Thank you.
I was looking for the key to associate with the mouse click on the small triangle to achieve the same result as going through the menu or the keyboard shortcut.
