I recently tacked two chainstays to a round (unlugged) bottom bracket. Did it in a jig. I then took the assembly out of the jig for fillet brazing.

The results were not good: one side was way off (widening the dropout spread).

Would it have been better to fillet braze in a jig … or improve my brazing skills (or both)?

You need to have an axle in the dropouts.  If the miters are tight this should hold alignment within a few mm.

Forks and chainstay assemblies definitely braze them up as much as you can in some kind of fixture. Cainstays and seatstays, I put them together, dropouts in their slots and a dummy axle, brazing/welding up the bridges in my Anvil chainstay mitering jig.  Then I put the stay assmblies onto the from triangle in my old HJ "universal" frame jig.  The HJ has kind of limited space for the torch.  I usually have to finish out brazes and welds freehand, but by then everything is pretty much securely in place.

I am a real novice but just completed frame #3. It is a touring bike. I had sliding rear dropouts laser cut and used Paragon inserts. When I  did mine I  used a dummy axle set a bit narrower than 135mm and when I  was done. Bingo!

This may just be a matter of distortion. If you finish your fillet on
the outside of the bb, both the bb and stay are going to distort in a
way that makes the stay splay out.
