I'm not sure a hash will meet your needs. What kinds of things are you trying to secure against? Examples:

1. I want to make sure that if the data in my database is stolen that the email addresses won't be able to be read.

2. I want to obscure the sender and receiver email addresses so that the sender can't see the receiver's email address and the receiver can't see the sender's email address.

3. I want to meet the regulatory obligations in whatever jurisdiction I'm operating in.
