so a finished device could look just like any other effects pedal,
without the user ever seeing the LED and sensor, right, or does the
protein solution go bad/need replaced often? My dad's a professional
musician, I'd be interested to know what he thought of this kind of
'analog' sound.

So I have figured out ways to dry it and turn it into more of a material but I think part of the cachet is actually using protein in solution. Yeah the protein also does go bad on the hours timescale which sucks. My original goal was just to create some sort of interaction between a person and a protein, the musical instrument is just the way I decided to go about it because really for me as a human being most of my communication is done through sound.
