Selected sayings of Gandhiji are rendered in Sanskrit by Dr. C D Deshmukh in गान्धीसूक्तिमुक्तावली. The first verse is as follows
उत्कटोऽथ विमलो मनोरथो यो भवेत्स परिपूर्यते सदा ।
शश्वदस्य नियमस्य सत्यतां दृष्टवाननुभवेऽहमात्मनः ॥
I have the book. But I failed to locate a soft-version in archive.org.

Yes it is a Gujarati word. In modern Gujarati, Gāndhī (ગાંધી) means a grocer. I have read that the word comes from Gāndhika, meaning a seller of perfumes. The term came to be applied to those who sold not only perfumes but also provisions, i.e., grocers. Gāndhika became Gāndhia and finally Gāndhī. Some Gujaratis, especially the Parsis have the tendency to transfer the aspiration on the ‘dh’ to ‘g’ while pronouncing the word, and consequently spell the last name as Ghandi in English. But when writing in Gujarati, they still write it as Gāndhī (ગાંધી).

I'd like to make another assessment here. For example, many words have changed due to English spellings. Some famous personalities who have surname like Basu are pronounced as बासु instead of बसु where it was वसु which became बसु in Bengali.
The name Kunal has become कुनाल instead of कुणाल.
Famous guy Asit Modi being pronounced as आसीत् मोदी instead of असित which means Dark.
So I think it's quite possible in the passage of time, this being mispronounced became a norm or rather I'd say became normal.
But you maybe right. The Gujarati word itself maybe गान्धी.
