I updated my iPad to iOS 5 the other day and updated the 18 apps that demanded to be updated because of it. So far, so good there. (Thank you, FaceBook, for finally making a native iPad app!)

BUT people in Memphis were telling me horror stories about the iOS 5 update for the PHONE. Just horrible things.

I therefore haven't updated it yet.

Is it safe yet??? Or should I keep waiting?

Probably your safest bet would be to buy an Android phone. :)

I have three devices in my household that have updated to iOS5- two iPhone 4's and an iPad. The only issue we had was Maria's iPhone took forever to update; I had read that day that Apple's servers were overloaded so it's to be expected. So far neither of us have had a single issue with the OS or any apps- it's been a great upgrade. Access to the camera from the lock screen and iMessage have been particularly welcome additions. If my upgrade were this month I'd likely do so to get Siri, but I'm going to try to hold out til iPhone 5 is released.
Agree with the sentiment on the Facebook iPad app. What took so freaking long?

Yes, Android phones are pretty safe from being updated regularly :)

I've updated my iPad with no issues. I think you're safe.

I have one friend whose phone got 'Bricked' with this and he was headed to the Apple Store...but i have other friends who have escaped with minimal pain.

In fairness, the guy who bricked his phone was a self-inflicted wound: it was his firewall causing the problem.

As far as I can tell the people having problems updating iPhones were caused by the carriers' authentication servers being overloaded by the iPhone 4S launch. That shouldn't be problem now.

Regardless of what you do to the phone during the update process, the worst possible outcome is that you have to reset it to the last saved image (and it saves just prior to updating). Even a bricked phone can be reset.
