I lose my data when QuickCursor pastes into a field with a character-limit constraint (and I'm over the limit)

Rather than copying the data to the clipboard, it bails and I lose my data, which is frustrating.

QuickCursor preferences > Disable clipboard restore.

Unfortunately I don't think QC has any way of knowing if the pasted in text gets truncated by a character restriction, only that the paste happened.

You might be able to find your last document by using QC again, command-clicking (or right-clicking) on the temporary document name in the text editor's window, and then choosing the parent folder (it'll be deep in the temporary directories). Your previous one may still be in there if the system hasn't cleaned out the temp directories yet.
