I've taken up learning Lojban as a hobby, but I was wondering if anyone could come up with any practical benefits of learning and speaking fluently in Lojban?

I look at it like learning an instrument. I do it because it's fun, and the goal is to be good at it so that it will be even more fun. There are several practical benefits of learning Lojban, which I'm sure others will enlighten you about, but the real reason I do it is because it's an end in itself.

I've found that it helps me organize my thoughts: trying to express something in lojban requires you to go beyond the symbol and dig into the substance (mostly because you don't have an expression already prepared, so you need to figure out what exactly it is that you want to say in the process of translating, since metaphors don't translate).

I've also noticed myself having thoughts that would be much nicer/cleaner/more precise if I could express them in lojban (but I'm not yet fluent enough).

The stated primary purpose of Lojban is to be a language which both humans and computers can understand, so that one can speak to both using the same language (rather than for example, English with humans and C++ with computers), so, there's that.

Actually, that is NOT the primary purpose, but one possible secondary
purpose. From the intro brochure (largely unchanged for 25 years):

Right, sorry. I had completely forgotten about the SWH.
