Email migration/Host transferring

Ok folks, throwing up a strange solution to our crazy problem.  Hope you can help clarify a few things.

We are dropping our old host - no ifs, ands or buts.  Our old host has the following: files, FTP accounts and our mail.

My question lies in the mail section.  We plan to employ Gmail as our mail server.  However, this is only going to be for emails that are coming from our old host.  They will be migrated to the Gmail server and the connection is severed between the old host and Gmail, thus these accounts will be inactive and only accessible for read only.  We plan to start with a clean slate on the new host side and ORGANIZE as that was our problem with the old host - thus the situation we are in. 

Are there any foreseeable (other than questions below) issues that this could cause?

If an email is needed to be forwarded after the connect is severed between old host and Gmail, is there any other way to do so other than updating MX records on the new host side? (would like to avoid doing so; a solution i.e. can email messages be downloaded from Gmail, imported into third party client (Outlook) and used from there?)

With the Gmail migration tool, does it literally migrate them or copy them over?  Can other tools such as mailjumpr.com be used if Gmail Migration tool migrates rather than copy?  (would like to have a backup)

How long does it take for the migration tool to complete? I have two accounts with upwards of 20k (yes you read that right, 20,000 emails) and the remaining 10 accounts with much less.

The mail migration tools are not supported on this forum, please use http://support.google.com/a/?hl=en.
FYI, we also have an Email Migration API (http://code.google.com/googleapps/domain/email_migration/developers_guide_protocol.html) that allows developers to write their own migration software and the API is supported here.
