I've had this same trouble, or something very similar. My Gmail
account was set up so my Outlook emails were forwarded from Gmail to
my Outlook account. For about 3 years, that worked well. Then, about a
year ago, some emails were delayed 2-3 days before they were
forwarded, and some emails were never forwarded at all. As far as I
could tell, they disappeared. For that reason I've stopped using my
Outlook accounts.
I mention this only to note that the OP is not alone in having this
problem, and the problem isn't something new between Gmail and
Outlook.
