The Society of Vertebrate Paleontology
(http://eteweb.lscf.ucsb.edu/svp/) maintains a listing of graduate
programs in vertebrate paleo. The Paleontological Society should be
contacted for information on more general paleo programs.
There really aren't any undergraduate paleontology programs anywhere,
though paleontology courses can be taken through most geology
departments, and paleontological research can be conducted along with
faculty. Most paleontologists get their degrees in geology with heavy
biological coursework, though biology degrees with heavy geology
coursework are also common. Strict emphasis on paleontology usually
begins in graduate school - which is as it should be, given the nature
of the job market and the need for paleontologists to be flexible and
broadly-trained.
