Sour Cream-Banana Bars

1 1/2 cups sugar
1 cup sourcream
1/2 cup margarine or butter, softened
2 eggs
1 1/2 cups mashed bananas (about 3 large)
2 teaspoons vanilla
2 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 cup chopped nuts
Browned Butter Frosting

Heat oven to 375 F. Grease and flour jelly roll pan. Mix sugar; sour
cream, margarine and eggs in large bowl on low speed, scraping bowl
occasionally, 1 minute. Beat in bananas and vanilla on low speed 30
seconds. Beat in flour; baking soda and salt on medium speed, scraping
bowl occasionally, 1 minute. Stir in nuts. Spread batter in pan.

Bake until light brown, 20 to 25 minutes; cool. Frost with Browned
Butter Frosting. Cut into 2 x 1 1/2-inch bars.


Browned Butter Frosting

Heat 1/4 cup margarine or butter over medium heat until delicate
brown; remove from heat. Mix in 2 cups powdered sugar Beat in 1 teaspoon
vanilla and 3 tablespoons milk until smooth and of spreading
consistency.

Peach-Banana Bars

3/4 cup packed brown sugar
1/2 cup margarine or butter, softened
1 jar (12 ounces) peach preserves
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup mashed bananas (about 2 medium)
1/2 cup chopped pecans
Peach Glaze (below)

Heat oven to 350 F. Grease and flour jelly roll pan. Mix brown sugar and
margarine. Reserve 2 tablespoons of the preserves. Stir remaining
preserves, the eggs and vanilla into brown sugar mixture. Stir in
remaining ingredients except Peach Glaze until dry ingredients are
moistened. Spread in pan. Bake until golden brown, about 30 minutes.
Spread with Peach Glaze while slightly warm. Cool completely before
cutting. Cut into 3 x 1-inch bars.

Peach Glaze
Mix 1 1/2 cups powdered sugar, 2 tablespoons reserved preserves and 1
tablespoon water until smooth and of desired consistency.

Banana-Oatmeal Cookies

1 cup sugar
3/4 cup shortening
1 egg
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon ground nutmeg
1 3/4 cups regular oats
1 cup mashed ripe bananas (2 to 3 medium)
1/2 cup chopped nuts or raisins

Heat oven to 400 F. Mix all ingredients. Drop dough by rounded
teaspoonfuls onto ungreased cookie sheet. Bake until light brown, about
10 minutes. About 4 dozen cookies.
1 cookie: 80 calories; protein 1 g; carbohydrate 10 g; fat 4 g; sodium
90 mg; cholesterol 6 mg.
Banana-Chocolate Chip Cookies:
Substitute 1/2 cup chocolate chips for the nuts.
