Chicken Lasagna
Party Chicken
King Ranch Chicken

Chicken Lasagna

2 cups chicken and 1 cup Italian sausage or 3 cups chicken
1/2 cup chopped onion
1/2 cup chopped green pepper
1 Tbsp butter
4 oz. can mushrooms, drained
1 can cream of chicken soup
1/2 cup milk
1/2 tsp. basil
1 1/2 cup cottage cheese
2 cups grated cheddar cheese (or cheese of your choice)
1/2 cup Parmesan cheese
6 no boil lasagna noodles
salt, pepper, onion powder, garlic powder, and red pepper

Saute chicken, sausage, onion, and green pepper until done with desired
seasonings. Add mushrooms, soup, milk, and basil. Mix (and season, if
desired) cheeses.
In a 9 x 13 inch casserole dish, layer 1/2 noodles, 1/2 cheese, and 1/2
meat with sauce. Repeat.
Bake @ 350 degrees for 45 minutes. Let stand 10 minutes before serving.
(This can be made up ahead of time and then thrown in the oven later)

Party Chicken

1 small jar dried beef, rinsed to remove the salt, this is a must to remove
the excess salt
4 boneless chicken breast halves
1 can mushroom soup
1 8 ounce container sour cream
4 slices bacon
Small jar sliced mushrooms, drained (or use fresh and saute them)

Pat the rinsed dried beef dry and place in the bottom of an oven proof
casserole. Wrap each chicken breast with a slice of bacon and place on top
of the dried beef. Mix soup and the sour cream and mushrooms, spoon over the
chicken, Bake uncovered 250: for 4 hours or 300: for 2 hours. Serve with
rice.


King Ranch Chicken

4-5 chicken breasts deboned and skinned
1 small green pepper,diced
1 large onion, chopped
1 can cream of mushroom soup
1 can cream of chicken soup
1 clove garlic, crushed
1 can Rotel* tomatoes with chilies cut up a little
3/4 pound longhorn cheese, grated, use more if you love cheese
1 dozen corn tortillas, torn in fourths

Cut chicken into chunks and cook in pan until done.
Saute pepper and onion in 3 TBS butter until tender; add soups, Rotel
tomatoes and garlic.
In large baking pan layer ingredients:
(1) chicken (cut in pieces) (2) tortillas (3) sauce (4) cheese. Repeat
until all is used, ending with cheese on top. Bake at 325 for 50 minutes,
uncovered.


All-in-One Pierogi Skillet

1 tbsp. vegetable oil
1 lb. ground beef
1 pkg. (16 oz.) frozen potato pierogis, thawed
1 pkg. (10 oz.) frozen broccoli florets, thawed
1/2 tsp. salt
1/4 tsp. black pepper
1 cup (4 oz.) shredded Cheddar cheese

In a large skillet, heat the oil over medium-high heat and brown the beef
for 5 minutes, stirring frequently. Add the pierogis and cook for 4 to 5
minutes, or until heated through. Stir in the broccoli, salt, and pepper,
then top with the cheese. Reduce the heat to low, cover, and cook for 2 to
3 minutes, or until the cheese is melted and the broccoli is warmed through.


Buddie's Burger and Tots Casserole

1 lb Ground beef
1 tsp Onion powder
1 can Chicken soup
1 each Bag tater tots
1 cup Cheese, shredded, cheddar

Brown the ground beef and drain. Spread in bottom of 13 x 9 baking dish.
Sprinkle onion over beef. Pour 1 can undiluted soup over the beef. Cover
top with tater tots. Bake for one hour at 350 deg . Sprinkle with cheese
and return to oven for 10 minutes.


Cheeseburger Impossible Pie

1 lb. ground beef
1/2 cup chopped onion
1 1/4 cup milk
3 eggs
1 1/2 cup (6-oz.) shredded cheddar cheese
1/2 cup buttermilk baking mix
tsp. garlic powder
1/2 tsp. salt
1/4 tsp. pepper1 thinly sliced tomato

Place beef in colander over bowl in microwave. Cook till no longer pink. Discard
grease, add onion, and pour into a 10" pie plate which has been sprayed with
Pam. Combine other ingredients. Pour over meat mixture. Cook in 350 F oven till
set, 30-40 minutes

Here are some very simple and easy recipes that have become staples around
my house when I'm too busy to cook (which is more and more often these
days)! Hope you like some of these!

Quick and Easy Dinner Casserole

1 lb. ground beef
1 pkg. (16 oz.) frozen hash browns, thawed (the cubed kind, not the
shredded)
1 cup Cheez Whiz or similar cheese dip
1 cup chunky salsa (mild, medium or hot
your preference)
Grated Cheddar cheese

Brown and drain ground beef. Place drained beef in a casserole dish. Add
hash browns and mix well. Pour cheese dip and salsa over beef/potato
mixture, and stir well, thoroughly combining all ingredients. Bake at 425
degrees for 25 minutes. Remove from oven, sprinkle with grated Cheddar
cheese, and return to oven. Switch to broil, and remove casserole from oven
when cheese on top begins to brown.
(I add a chopped red onion to mine.)

Chicken Polynesian

1 or 2 chickens, cut into pieces
15 or 16 oz can crushed pineapple
1 cup brown sugar
1/2 cup soy sauce

Brown chicken in a little oil. Place in baking pan. Combine remaining
ingredients & pour over chicken. Bake covered until done, about 1 1/2-2
hours in a preheated 3500 oven. Baste once or twice.

Pepperoni and Cheese Stromboli

1 tube refrigerated pizza dough
3 Tbsps brown mustard
1/4 lb pepperoni
thinly sliced
1/4 lb Mozzarella cheese -
thinly sliced

Preheat oven to 375F. Unroll dough onto a jelly roll pan or large baking
sheet and flatten into a rectangle. Layer the mustard, cheese & pepperoni on
the dough within 1/2" of all edges. Roll up from the long side and pinch the
seam to seal. Seal the ends and turn seam-side down. Bake 25 minutes until
golden brown.
Serves 4, with a salad or light side dish.

Whistle Dish

1 pkg. tube-shaped noodles
1 lb.ground beef, seasoned with garlic powder, salt and pepper
1 jar spaghetti sauce
Shredded Mozarella cheese

Cook the noodles according to package directions. Brown the ground beef and
season with garlic powder, salt and pepper. Drain grease. Place cooked
noodles in baking dish. Spoon ground beef over noodles. Pour spaghetti
sauce over ground beef. Top with shredded mozzarella. Bake at 350 degrees
(in preheated oven) for twenty minutes.

Cranberry Chicken

1 bottle Catalina dressing
1 can whole berry cranberry sauce
1 envelope onion soup mix
8 boneless chicken breasts

Mix first 3 ingredients and refrigerate for several hours. Spread mixture
over chicken and bake at 350 degrees for 45 min. to 1 hour.

Chicken Crescent Casserole

4 Boneless chicken breast halves
2 pkg. crescent rolls
1 cup cream of mushroom or cream of chicken soup
2 cups water
1 cup Velveeta cheese, cubed

Saute chicken over medium heat until no longer pink. Cool, then wrap in
crescent rolls. Place wrapped chicken breasts in baking dish. Bring soup,
water and cheese to boil. Pour over chicken. Bake at 350 degrees about 30-40
minutes.

Enchilada Casserole

1 1/2 pound ground beef, browned


1 can cream of chicken soup
1 can cream of mushroom soup

1 small can enchilada sauce (or I use picante to taste)
2 cups shredded cheese (that Mexican four cheese is great in this)
1 onion chopped
1 pkg corn tortillas

Brown ground beef in a skillet Mix ground beef, soups, enchilada sauce in
skillet and simmer :
Mix onion and cheese in a bowl: Spray a 9x11 cake pan with nonstick spray. Layer
tortillas, meat mixture and cheese mixture. Repeat. Bake in 350 degree oven for
about 30 minutes

Chicken and Rice Casserole

4 chicken breast - skinned


1 can cream of mushroom soup
1 can cream of chicken soup

1 cup rice
1 package Lipton dry onion soup
1 1/2 cups Milk

Mix soups, rice and milk. Pour over chicken breasts in casserole dish.
Cover tightly and bake at 350 degrees for 1 to 1&1/2 hours.

Mushroom Swiss Cheeseburgers

4 French rolls
3 Tbsp. butter
2 green onions, finely chopped
1/4 lb. mushrooms, sliced
1 lb. lean ground beef
1/2 tsp. garlic salt (I'd use minced garlic and add some salt)
6 oz. shredded Swiss cheese

Cut French rolls in half lengthwise and spread with softened butter. Broil
rolls until lightly browned; set aside. Melt 3 Tbsp butter in a skillet and
saute the onions and mushrooms (and garlic, my choice) until just tender.
Remove from heat and let cool. Mix together with sauteed mushrooms and
onions the ground beef and cheese. Pat mixture evenly on toasted French
roll bottoms. Bake in a 450F oven for about 20 minutes until nicely
browned. Reheat the tops briefly; season with salt & pepper to taste.


Sausage Stuffed Shells

1 lb. Italian sausage
1/2 cup chopped green onion
1 egg, beaten
20 jumbo shells, parboiled and drained
2 jars 16 oz. Each Ragu Spaghetti sauce, divided
1/4 cup olive oil
1/2 cup chopped onion
4 slices bread, crumbled
1/2 cup seasoned bread crumbs
3 toes minced garlic
1/4 cup grated Parmesan cheese

In heavy deep skillet, saute onions and garlic in olive oil until limp. Add
sausage which has been removed from casing. Fry together with seasonings
until sausage is cooked. Add bread crumbs and beaten egg. Mix thoroughly.
Next, fill hot parboiled shells with sausage mixture using a teaspoon. Pour
1/2 the Spaghetti Sauce into a 13x9 in. baking pan. Arrange shells in pan.
Pour remaining sauce over shells. Cover tightly with foil and bake at 350
degrees for 30 minutes or until bubbly. Remove foil; sprinkle grated cheese
over top and bake uncovered for 10 minutes more. Serves 5

Sloppy Joes

1 lb ground beef
1/2 cup chopped onion
1/4 cup chopped green pepper
8 oz. can tomato sauce
1 Tbsp cider vinegar
3 Tbsp barbecue sauce
1 Tbsp brown sugar
1 1/2 tsp Worcestershire sauce
1 tsp salt
1/4 cup ketchup
1/2 tsp pepper

Brown meat well and add vegetables. Cook until tender and add remaining
ingredients and simmer 20 minutes, covered.

Chicken Licken Pork Chops

6 loin pork chops
1/2 cup flour
1 teaspoon salt
1 teaspoon dry mustard
1/2 teaspoon garlic powder
1 tablespoon fat
1 can chicken and rice soup

Dredge pork chops with mixture of flour, salt, dry mustard and garlic
powder. Melt fat in skillet on medium heat and brown chops. Turn heat to low
and add soup. Cover and simmer for one hour.
