Cuban fried chicken

CUBAN FRIED CHICKEN

5 garlic cloves peeled
1 tsp salt
1/2 tsp pepper
1 tsp dried oregano
1/2 tsp cumin
1/2 cup sour orange juice
( or 50% sweet ornage juice and 50% lime juice )
2 chcikens ( 2 lb @ ) cut up
1/2 lg onion peled and sliced
1/2 cup oil to fry

Mash garlic with salt and pepper and spices. Stir in orange juice and
set aside. Place chicken pieces in single layer in glass dish. Arrange
onions over chicken and pour on marinade.
cover with plastic wrap and chill a few hours or overnight.
Drain chicken, discard marinade. blot chicken dry.
skillet fry chicken pieces the the hot oil over med heat about 20
minutes each side until golden and cooked through.
Serve hot
