Fat-free yoghurt beaten and thinned with a little water,
then seasoned how you like.

Skip the dressing altogether...that's what I do if a
restaurant can't come up with oil and vinegar.

Well, would balsamic vinegar with crushed garlic in it for a while
do? I know it's fat, but a small bit of olive oil would improve it
and help it to stick to the vegetables. Oregano and/or chopped basil
would add flavor. Whatever herbs you like.

I like my salad to sit in the dressing for a while. Give it a toss now
and a while. That's just me.

Take some fat free yoghurt, and wisk in some _good_ quality balsamic vinegar.
That's it. Add a tiny bit of Dijon mustard, if you like.

Dijon mustard, salt, pepper, lemon juice, orange juice. Blend well.
Or Dijon mustard, salt, pepper, curry powder (optional), low-fat yogurt,
soy sauce, orange juice.

Fat free dressing? My emotional take on them is that they are wretched and I'd
rather do without. That being said, this one is good. I can't stand fat free
mayo, but in this it is ok. Go figure.

a splash of balsamic vinegar

This is really good on a taco salad.

This is a fat free dressing our company cafeteria served at the salad
bar. It was so good, I asked for the recipe. I usually cut the recipe
by half or one third as I can never consume 2 cups before the OJ turns.

FAT FREE SOY DRESSING

1 T fresh basil
1 T fresh cilantro
1 T fresh lemon grass
1 T fresh mint
1 C soy sauce
1 C fresh orange juice
1/4 C rice wine vinegar
2 T sugar (optional)

Finely mince herbs and combine all ingredients. Best to age at least
overnight.

Yes, for a medium sized salad (for 2 people) just toss the salad with the
juice of 1 nice sized fresh lemon, then sprinkle with your favorite herb
seasoning mix such as Mrs. Dash and a little salt, Toss once more to
distribute the herbs. You'll be surprised. Tossing (mixing) the salad is
very important.

Try grating a little fresh ginger into a couple of tablespoons of
rice wine vinegar. A drop of sesame oil will add flavor without
much fat.

Or, just squeeze a fresh lemon or lime over the salad. I particularly
like this with a salad composed of lettuce (almost always romaine),
tomato, onion, and thinly sliced fresh jalapeno or poblano chile.
(Lemon also works well with a salad that contains a few sprigs of
fresh dill, too.)

paste, lemon juice, a touch of sugar, white vinegar or white wine and sesame
