We met in the scuba group, I later found him over here. He is an
interesting person, a good writer and photographer. Very talented.

ObFood:

Vietnamese Grilled Pork

1 tablespoon sugar
1/2 teaspoon garlic, chopped
1 cup soy sauce
1/2 teaspoon anise, freshly ground
1 tablespoon stir-fry oil
1 tablespoon ginger, chopped
1/2 teaspoon cinnamon, ground
1 cup vermicelli, cooked
1 lb pork tenderloin


Cut pork into 8 to 10 strips. Combine marinade ingredients. Add meat
and marinate meat for 1 hour. Grill or broil pork until done. Arrange
lettuce leaves, mint, cilantro, and noodles on a serving platter. To
serve, wrap hot meat, mint, cilantro, and noodles in lettuce leaves.

That was a long time ago. He did, but then retired and moved to
Thailand where he has been for quite a few years now.

Yes and he posted from there a few years. Then they retired and
moved to Chiang Mai, Thailand. He posted from there for a short
time, then disappeared from rfc.

Hello again guys,

Sorry for the confusion regarding Steve Kramer. Apparently it is not
the same person as some of you might know who has posted here on
rec.food.cooking in the past. There is apparently another guy by the
same name who lives in the north of Thailand who also has a Japanese
wife. This particular Steve operates a very successful photography
business apparently and as somebody else has mentioned, you can check
out his photographic gallery online. Looks fantastic from a very brief
glimpse I had earlier too.

Either way, be sure to check out the other Steve and his restaurant 'A
Touch of Spice' if you are ever in Singapore. He and his wife Nobuko
are lovely hosts and will ensure you have a wonderful dining time.

Guys from what I can tell Nobuko is a fairly common female Japanese
name, so it could very well be it is nothing more than just a
coincidence and both Steves are married to a woman of the same name.

You're correct Dora - part of a recent restaurant review published in
one of the local Singaporean daily papers confirms his name is
slightly different to the Steve Kramer you guys are familiar with.

Hi Felicity,

The Steve Kramer I know of from the north of Thailand does indeed
spend an amount of time in Singapore - around 6 months out of the
year. He is based between both Chiang Mai and Singapore in his main
role as a photojournalist for a major multi-national company with
their main office being in the Clarke Quay area of Singapore. As far
as I know, he does not have a restaurant business on the side as by
all reports his work is in major demand by several SE Asian companies
and therefore it is very much doubtful if he would have the time to
cook fulltime also. I could be wrong though as he is a fantastic chef
as well as a very talented photographer.

Hello again Dan,

Just in regard to your query, I can confirm that Steve does in actual
fact have 2 bases nowadays - 1 in northern Thailand and the other in
Singapore city. He does pass on his best wishes to you and your family
and did mention to me that he is hoping to catch up with everyone here
at rec.food.cooking real soon. He is currently on a shooting location
in Johor Bahru (exotic southern Malaysia) directing a photo shoot for
the John West Salmon company. I am sure he will reply to any email you
send him as he always makes time for those who he calls a friend -
such as yourself.

The restaurant commentary may be legitimate but that's not "our" Steve
Kramer.

Wow, does that sound good, Becca. Do I have to use that much of the
sweet spices, though? And to think that I did a pork tenderloin
stir-fry just two-three nights ago. Dang.

Oh, what the heck is "stir-fry oil?"

Do you cut the tenderloin lengthwise? Strips? How about medallions?

2-1/2 months ago he was at "Eleven years, one month, four weeks, 12
hours, 38 minutes and 48 seconds. 122325 cigarettes not smoked, saving

It's hard to imagine that it's been 11 years since he quit!

Hello Melba,

It really is amazing to think what the total cost of tobacco addiction
is over the course of a lifetime isn't it. Looking at Steve's figures,
he has already saved a small fortune by having the willpower to resist
the urge to light up over 11 years ago. At least the years he did
spend smoking don't seem to have had TOO much of a negative effect on
his health (well his energy levels at least) judging by the extremely
busy lifestyle he leads at the moment. By the way, I don't need to
smoke, I have enough bad habits as it is! :)

This whole thing is ridiculous. I phoned "our" Steve Kramer (he's in
Thailand, by the way, and not in the restaurant business) and he sends
his regards. He told me that he received your email, Dora. :-)

He says to thank his long-time r.f.c. friends and acquaintances for
their good words on his behalf. I was asked to relate that he's fine,
Nobuko is fine, business is good, and the food's good. And he
remembers quite well the pickle hat pics he took for me in Thailand
several years ago. Hmmm, I should see if I can get to that old site of
mine where I posted them. I let it lapse last summer. Whoops!

OB food: Onion soup for dinner tonight after a totally fabulous lunch
at a Greek place in Dinkytown (near the U of MN Minneapolis campus)
called Kafe 421. Oy!

I caramelized the onions in a skillet instead of my usual crockpot
thing; it took an hour over low heat, stirring every 15 minutes. Boy,
do those suckers reduce in volume!

Feel free to change the recipe to suit yourself. It doesn't taste very
sweet, if you use 1 cup of soy sauce. I slice the pork in thin
strips, medallions would work well.

My how time flies. He quit in August of 1998, we were both going on
dive trips right after he quit. I was proud of him, he quit before
nicotine gum, patches, lozenges, Welbutrin, etc.


BTW, one of the projects my oldest son works with, is nicotine. They
get it from India but it is impure, so they have to purify the nicotine
so they can add it to patches, gum, etc. A 55-gallon drum of nicotine
is so valuable, they have to guard it full time against theft.
