The Bacardi Rum cake recipe (following) is the one I use, except I don't use
Bacardi's. I use either Meyer's dark or Gosling Black. Everybody - even my
picky father (!!!) seems to love it.

Oh yeah - one more note. The last time I made this, instead of dropping the
nuts into the pan and pouring the batter over them, I ground them up in the
food processor and added them to the cake batter. That cake was so moist and
had the mostly lovely texture!!

Rum Cake

1 cup chopped pecans or walnuts
1 18.5 oz. pkg. yellow cake mix
1 3 3/4 oz. pkg. jello instant vanilla pudding
4 eggs
1/2 cup cold water
1 cup oil
1/2 cup dark rum (80 proof)

Preheat oven to 325, grease and flour 10" tube or 12 c Bundt pan. Sprinkle
nuts over bottom. Mix all cake ingredients together. Pour batter over
nuts. Bake 1 hour, cool, then invert on serving plate.

Glaze:

1/4 lb. butter
1/4 cup water
1 cup granulated sugar
1/2 cup dark rum

Melt butter into saucepan. Stir in water and sugar. Boil 5 minutes, stirring
constantly. Remove from heat. Stir in rum.
Prick top (chopsticks work well). Drizzle and smooth glaze evenly over top
and sides, allow cake to absorb glaze. Repeat until glaze is used up.
