Banana cake

100g/4oz/half a cup butter
small cup sugar
1 egg
2 ripe, mashed bananas
1 1/2 cups flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
2 Tablespoons cold milk

Cream butter and sugar. Add egg and bananas and mix well. Sift in flour
and baking powder, mix well. Dissolve soda in milk and add. Mix well to
combine. Poour into a greased 20cm/8inch square baking tin which has been
lined with paper. Bake at 180C/350F for 30-50 mins. Cool on a rack. Ice
when cool, if desired.

Yes! Here's a great muffin recipe. I just made it again after not
being able to find the recipe for many years! This recipe is based on
one in Sharon Tyler Herbst's "Breads" (Tucson: HPBooks, 1983). If
you try it, please share your comments.

Maple-Banana-Bran Muffins (10)

These muffins are very good and not too sweet. Someday I might
try a version using honey; I may also try adding cranberries
or chopped dried apricots. Retried 2/2001 and still great.

1 1/4 c flour (up to half whole wheat)
1/2 c unprocessed bran flakes
1/2 c wheat germ
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 c chopped walnuts or pecans (preferably toasted, not
ultra-dark though)
2 eggs, at room temperature
3 flavorless oil (actually, last time I used walnut oil)
1 c mashed banana
1/3 c maple syrup (I use B-grade, which is very flavorful)
1/4 tsp natural banana flavor (optional--none of that
artificial stuff)

Preheat oven to 400F. Grease or spray muffin cups, use a nonstick
pan, or line with paper liners.
In a large bowl, combine the flour(s), bran, wheat germ, baking
powder, baking soda, and salt. Then stir in the toasted nuts. In a
smaller bowl, beat the eggs and oil together. Stir in the banana,
maple syrup, and banana flavoring. Stir this mixture into the dry
ingredients just until they are moistened. Spoon into muffin cups,
filling empty cups with water. Bake at 400F for 12-18 minutes or
until the muffins test done. Serve hot, warm, or cold. Jean B. via

Here is one of my family favorites:

MOM'S BANANA BREAD

1 3/4 Cup Flour
2 tsp. Baking Powder
1/4 tsp. Baking Soda
1/2 tsp. Salt
2/3 Cup Sugar
1/3 Cup Shortening (Crisco)
2 Eggs (beaten)
3 Bananas (bruised/mashed)
1/2 Cup Walnuts (chopped)

Sift together dry ingredients. Add wet ingredients and mix well until
smooth. Stir in nuts. Pour batter into a GREASED loaf pan. Bake at 350' for
about 55 mins -1 hour.

A few years back there was a couple out in the midwest who were interviewed
on television. They had adopted around 20 children with special challenges.
The Mom said that her grocer gives her their brown bananas. She FREEZES
them and later uses them for all kinds of banana recipes, even ice cream.

Remove them from the skin and wrap in plastic. Freeze.

Put milk in blender. Add Nestle's Quick or (if you are a bodybuilder) one
of those whey/soy protein powder mixtures.

Blend... add frozen banana... you will have a great shake.

Banana Walnut Gift Loaf (Diamond Nut Co.)

¾ cup sugar 2 tsp baking powder
¼ cup shortening ½ tsp salt
2 eggs ¼ tsp soda
1 cup mashed banana 1 cup chopped walnuts
2 cups sifted flour

Heat oven to 350°. Grease 9"x5"x3" loaf pan. Mix sugar, shortening and
eggs; beat hard until light. Add mashed banana. Stir in sifted dry
ingrediants, beating smooth. Add walnuts. Pour into pan. Bake 55 to 70
minutes (top brown & toothpick comes clean). Cool on rack.

I put them in smoothies with (fresh-squeezed) pineapple-grapefruit
juice. I also juice up a thumb-sized piece of fresh ginger root with the
pineapple and grapefruit. A lemon or lime goes well with this for a
great waker-upper or post-workout treat.

Bananas Foster...

Melt butter and brown sugar (perhaps with cinnamon/vanilla), toss in some
cut-up banana (we like them sliced) and cook until the bananas are soft.
Heat some rum (warmed up), flame it and pour it over. Stir the bananas up
and serve with ice cream. (we like Haagen-Daaz vanilla. but, recently tried
this with Safeway brand which was on sale... some kind of pineapple
macadamia nut with crust pieces. Pretty good.
