Some manufacturers of LED fixtures (eg. PixelLine
http://www.pixelrange.co.uk/110/intro.htm ) use Amber LEDs together
with their RGB mixing LEDs

What is the benefit of doïng this?

It gives you a smoother colour space & better rendering, LEDs are much
closer to monochromatic than a red filtered light so you get imperfect
colour rendering.

I understand, but why only amber, and not cyan, or other colors?

If you want a really good CRI you do use further colours, but it's a
question of good enough, the law of diminishing returns comes to get you

Full white in RGB LED mixing gives a particularly cold white, adding
amber warms it up a bit and allows a better range of warm pastels.

Selador do use 7 colour mixing
