Where do I set the default item format to HTML?  Can't seem to find it in the help file (which is still a gem! Thanks Tom!)

File | Properties and then uncheck the Default to Plain Text checkbox. 

 

It's also possible to set a template for each item type in a database, if you want Tasks items to be plain text, for example.  In that case you would open a Task item, right-click on the editor, then choose Save As from the pop-up menu.
