Opening files with default editor

I see Zipeg uses the default file editor when opening up a file that's in an archive. However, I'd like to be able to open a file with a "default editor" (For example, VIM). 

Some files have other ways of being opened, but I'd like to be able to override this. (I don't want a perl.pl file to open with Perl, for example), and some files (like MANIFEST.MF) don't have a default editor in Mac OS X. For whatever the reason, I'd like the ability to assign a default editor, and to open files with that default editor.
