zpool import <old> <new>

BTW 99% of zfs related questions are well covered with googling, the alignment between solaris, freebsd, OSX, & zfs on linux these days is very good.

Although I always feel a wee bit nervous each time doing something major.

yes, quite simple.
You can change the name while importing the pool:

zpool import oldname newname

Of course, it has to be exported first.
