For example the plugins downloaded the configurations...

Hi.
In the Options dialogue there's a reset button. There's no functionality
to undo/reset add-on installations.

If you delete the config.xml file before starting ZAP then it will get created from scratch with the default values.
It is located in the ZAP default directory: https://www.zaproxy.org/faq/what-is-the-default-directory-that-zap-uses/
Or you can start ZAP with a new working directory using the "-dir" option, that also gives you a clean sheet.
