Special Note: All honey will crystalize eventually. We prefer a creamed honey rather than a larger crystal honey. To produce creamed honey, go to the honey section and buy a small creamed honey, we used about an 8 to 10oz jar. Mix the creamed honey, called “seed honey”, with 3 quarts liquid honey. Churn it until well blended and then store it in a cool area for a few days.
Creamed honey is simply a smaller crystal so it’s creamy. It is made by dehydrating honey, grinding it down to a fine powder and mixing it with liquid honey. This gives it a much smaller crystal to crystalize to.
No honey can be called organic because bees will forage up to 2 miles, but the bee farmer has not used any chemicals or antibiotics to treat these bees. It is NON GMO because this honey comes from wildflowers on White pass below Mt Rainier.
This honey has been collected with an extractor, then slowly strained to remove any wax particles, and immediately bottled in brand new glass quart jars and lids. It is not pressure filtered or heated in any way. It is a light flavorful table honey that everyone loves.
There can be some small bits of beeswax and pollen that float to the top of the jars, it can be eaten or skimmed with a spoon. It’s the really healthy stuff.
Honey never spoils but does crystallize. It can be easily melted back to fluid form by placing it in a pan of warm water on the lowest setting on the stove until it completely melts. Do not heat over 120°, do not microwave and do not boil, it destroys the health aspects of honey enzymes and changes the taste.
