The actual values are set in the file services.properties, which is located in the WEB-INF/conf folder of your deployed web application (which will be in /var/lib/tomcat[6|7]/webapps/xnat). Those properties are used in the mail-services-config.xml, but, as long as you have a standard SMTP set up, you shouldn’t have to mess with that file.
The exception is if you’re using gmail or some other ssl/tls-secured server, in which case you have to configure the encryption attributes. There’s a configuration file named mail-services-config.smtps.sample.xml in your xnat_builder folder under plugin-resources/conf. You can basically copy this file over your mail-services-config.xml, set the username and password in your services.properties, and restart Tomcat.
