Modifying DICOM with session label change

On a server running 1.9.1.1 build 158, I need to change some MR session labels, and I was hoping that would have the knock of effect of changing the DICOM tags as I understood to happen from the "Anonymization During Metadata Edits" in https://wiki.xnat.org/documentation/where-dicom-anonymization-happens-in-xnat

However, this does not seem to change the underlying Patient ID tag as I thought it would. I also made a little site-wide anonymisation script in the project as well:
(0008,1030) := project
(0010,0010) := subject
(0010,0020) := session

But 0010,0020 still has the original, incorrect session label. Am I doing something wrong here or is that not how the dicom modification works?
