We have a postcard we're going to print with 2 pages (front & back) with 17 different possible art combinations. In the data file, each record has a column that we have designated which PDF to use. Can we create one graphic content object to designate which pdf to use on the front and back? Or do we need to create a graphic content object for the front and an additional graphic content object for the second page (back)? What's the easiest way to do this in XMPie?

The easiest solution is to create two graphic content objects for the front and back images.
However, if the PDF is the full page, and you have the latest v25.3 you can also use the new PDFAssetsPagesTable function as shown here:  Tutorials - What's new in PersonalEffect v25.3
