When an user checkouts their order in uStore, is it possible to have xmpie create a .json file and deliver it a remote folder?

You can also use triggers to save an XML containing all the order details and
* save it to a local file on the server
* save it to a network SMB share folder
* send it to a web service
If you really need .json instead of .xml then you will need to write or find a tool to handle the change in data format.
