How can I change the default settings for the Theme and the font size/
shape when creating new relationships?

current XMind does not have this feature. But I think this is worth to consider.

You can change the topic font / color / margin / ... in the file
"defaultStyles.xml"
In my case this file is located in the following folder C:\Programme
\XMind\plugins\org.xmind.ui.resources_3.0.1.200812152237\styles
