I've migrated to xataface 3 and the font is larger and the number om columns is less
Only 5 columns are displayed on a partial filled screen.

Is it possible to customize the display ?

Yes, it is possible to customize all styles using CSS. Can you post a screenshot of the problem?

I've attached an example from v3

The font is larger compared to v2 and shows word wrapping, while in V2 the column width is scaled automatically
Also the page is not filled en showing much less columns.

When (much) more tables are configured the top of the pages becomes messy in v3, while in v2 an pull-down menu appears.

Can you please give some tips on how to achieve this in CSS ?

You can still use the g2 theme if you like.  Just add the following to your conf.ini file [_modules] section

modules_g2=modules/g2/g2.php

Alternatively, you can solve most of the problems you mentioned without too much difficulty:

E.g. Customizing the navigation menu (you can group your tables into drop-down groups).  https://shannah.github.io/xataface-manual/#tables-navigation-menu
