F10 Preferences > Open&Save Tab:
Enable "Show Open with WriteMonkey in Windows Context menu"

Or alternatively, do what you already did, then at the last step, after you have selected WriteMonkey.exe, enable the little checkbox that says: Always open with this program. You can of course, also use any of the other Windows methods (Folder options in Explorer etc) to assign Writemonkey to .txt extensions.

The title says it all really. If I right click on a text file, select Open With > Choose Program and navigate to the WriteMonkey.exe I can select it but it never appears on the list so I can't use that method. Is there another?

Under Preferences->Open&Save, you can check Show "Open with WriteMonkey" in Windows context menu, and that ill give you a right click open with WM option.  You can also find the notepad.exe (can't rightly remember where it is in XP), name it something else to deactivate it, then drop a shortcut to WM in that directory and rename it notepad.exe.  If you have trouble with either of those, or they turn up to not be exactly what you wanted, there are always tons of little apps, like Types (  http://types.en.uptodown.com/ ) that will let you make that reassignment.  I'm sure there are a ton of other ways to do it too if you get the urge to google about for it.

I've changed the name of file WriteMonkey.exe (for example: WriteMonkey(1).exe) and than I was able to add program to the list.
