Atomics have a habit of surprising you. Especially if you don't spend
all your time in the Atomic world. For example, did you know that
espresso grind is very hard to achieve without a flat burr grinder?
Apparently the flat burrs produce both small and even smaller
particles, so that when you put the grinds in the basket and feed the
water through, the smaller particles drift down and partly block the
water flow, creating that extra pressure that makes the difference
between crema and no crema on your coffee.
