Strange behavior for a Water/Moisture Sensor

I've got a Water/Moisture Sensor that keeps radically changing the measured humidity level. Every few minutes I get notified that it's too dry, then a few minutes later that it returned to the normal moisture level. If it were just that I would think it was just a bad sensor, but the "too dry" alarm is inside the "normal" range (see screenshot).

This used to happen maybe once a week and I just figured it was a fluke, but now it's happening every minute or two. So my two questions are: why is it alarming when still inside the configured range, and why does it keep cycling back and forth?
