I have been making and drinking water kefirs for the last three months. I am lovin it. Now I have presented it to my business-savy brother, and he wants to make it big. However there are some questions I need to find the answers to. Either by trial and error, or you huys might know something I don´t and perhaps you will give me som ehlpful hints?
I
have all I need to make 200 liter water kefir every 24 hours, except knowhow. I have
been making small batches of 5 liters for my family for three months
with huge success. I only have somewhere around 1/2 cup of
kefir grains. Will that be enough to make 200 liter in one go?
Will I have to wait longer, or it is not possible to make such a huge batch with such a small amount of kefir grains?
How do I grow big amounts of kefir grains in a short time?

I just found this page while googling stuff about water kefirs. I was wondering if you started your industry and and if so, how it went, I have a couple of questions I'll ask if you get back to me.

Yes.... I'm wondering too. I have a different version of water kefir to commercialize in the US..... however, I need a food scientist who is also a fermentation guru. Did you find anyone who is able to take tests to the lab, etc.?
