I'd like to help you archive wikis. I'm an experienced wiki admin and Linux user, and understand the mechanics of the process at https://www.archiveteam.org/index.php?title=WikiTeam, but I'm not clear about your strategy of which wikis to do first, as you could be focussing on particular farms, wikis that are now moribund, subject areas etc. My picking a few wikis from wikiapiary seems rather random and inefficient.

If you had a mechanism for providing me blocks of wikis you considered important, I could just get on with them for a bit. I seem to remember a wikiteam warrior client, but that seems to have gone now, so I'm not sure how to proceed,

Then just do all wikis. :) You can start from those which have the
oldest dumps on archive.org and do a few hundreds at a time, if you
don't have enough resources to do all of them.
