Expermenting with my new barrels

My barrels arrived on monday so I immediately filled them with water
for a leak check. They were perfect, so 24hrs later I filled one with
a cheap scotch to see what kind of flavor improvement the oak would
give it. With the other I filled it with clear neutral spirit cut to
approx. 100proof. (ABC Liquor $24.95 1/2 gallon 150 proof)
It's now only been about 48hrs and the scotch already has a better
flavor, and the change to the neutral spirit is amazing. The harsh
bite is gone and the lite oak flavor is wonderful.
The scotch will probably be consumed before it could could absorb to
much flavor from the oak but not so with the neutral spirit. It will
need to be monitored (sipped daily) and then bottled before the flavor
gets overpowering. Probably won't be a issue as the keg gets more use.

The last time I was in Florida I did the same thing with the ABC liquor 150 proof and it worked out wonderful but like you said I had to put it back in the bottle before it got too much flavor. I’m really glad you’re enjoying your barrels as much as I do. At your service Clay
