trimming pea starts

Has anybody had experience with starting peas in soil blocks or cell trays, and then trimming them before planting them out? Advice on the internet ranges from saying that they won't grow any more if you trim them so wait until they reach the top of the trellis, or that they will branch out from the cutting, but production of pods will be delayed by a week or two.

Timing putting out our pea starts is always tricky because I like to do it with our students but of course they are getting super leggy...just wondering if I should trim them to fatten them up and make them easier to manage.
