To change playback speed in Potplayer without using shortcuts, you can always click on the Control panel icon and in the Playback section you can set the playback speed to faster, slower, or default.

I've installed SVP PRO and I'm using mvp bundled with the installer, without enabling SVP the video has no issues but after some time with SVP enabled the audio and video go out of sync.
If someone can help me solve this would be great, I've bought the PRO especially for mvp support.

Perhaps it is lack of performance to parse video. In that case video may plays behind audio.
What CPU load while playback?
If not high you can try to use your CPU more effectively by increasing processing threads number.
If CPU load is high then low down SVP settings in SVP Control panel to get realtime speed (SVP Index in SVP Performance monitor must be =1).

But going back to the DirectShow/ffdshow based players (MPC-HC, Potplayer) I get a straight 1.00 line as my SVP Index. With higher speeds on these players the index goes up to 1.2 but the graph stays at this value and does not go up and down a little.
My system has a Xeon E3-1231 v3 CPU and a GTX 1070. Is this too slow for SVP?

On the left I use Potplayer/ffdshow on normal playback speed and then on 1.2x speed. On the right the same with mpv. The mpv playback gets out of sync in less than a minute.

I was watching a stream but wanted to check the replay. I opened the link of the video in another tab while the stream was still playing in the first tab. When I do this the speed of the video changes it self, swinging for x1 speed to 1.25 speed at random. I have no idea of what is happening, it doesn't happen every time.
It's not a big problem but I thought you would be interested.

This needs to added, not only for "playback" but for video editing as well. Some of my videos are 4-5 hours long, but I want to create a highlight of a section of maybe 2-3 minutes in the game. It would be extremely nice to playback of a faster speed instead of me trying to find the spot/s I want to highlight.
