The Ministry of Sound chilllout albums are pretty good. You could also try some of their euphoric trance compilations. Classic FM often have classical chillout, including people like Einaudi, Phillip Glass etc. Some classical chillout might come under 'minimalist'.

I find all of Zero 7's albums to be pretty chilled, and some Morcheeba. You might want to try some film soundtracks as they can often have pretty chilled music on them. There's also a genre called Ambient you could look under. I quite like Max Richter's Shadow Journal/Blue Notebooks.

They are good, especially for newbies. They have most of the mainstream stuff that doesn't usually get played on the radio before about 1am. Although, the last one I got that said it was trance classics was just a whole load of heavy bass remixes. Grr.

Most of us in my Music Tech class are sequencing Ambient songs as part of our coursework. There is a point, however, when the 'Zen Calm' is shattered by Bloodlust, as your iMac crashes and you have to restrain yourself from hitting it with a chair.
