Dear Peter,
It is possible to get analytics for your site for most of the
information you mention. You need to create an account at
https://analytics.google.com/ and set up what Google calls a
property for your website. A tag ID will be assigned to the
property. Please email this to webo...@sil.org with the
dictionary name and we will add it to Webonary so that data is
sent to your account.
I'm not sure if the downloads are recorded but I haven't explored
Google Analytics in depth.

Google analytics provides a way to see how many people are
visiting your site and where they are from. You can also see which
pages they visit and other information, some of it is aimed at
businesses to help them in their marketing and sales.
