The reason you struggled is the same reason that all of us struggled.  We had Tomlinson, Hall, and Smith give us very vague definitions of what differentiated instruction is and how to implement it.  This is why all of my principals can not put it in layman's terms.  They still like to say the word, though.  

In regards to your sites:

1.  Really Books.  I am going to look into this.  This could be a great history or government resource.  I could have my students create great "products".
2.  Polly Everywhere.  I hope that it is as easy as you say it is, because I am going to use it, next year.  I will create surveys to assess the learning styles of my students.
3.  Adobe.  It would be a little too creative for my class's needs.  It would create too much creativity and not enough learning.  The forest would be lost for all the trees.

I checked out all the resources you had listed. I would love to be able to use Adobe: however, the price is scary. I am going to talk to the art teacher, who also has the graphic design class and the yearbook class and see if we can share budget resources. If we can, I am soure we can come up with a co-curricular project for English and yearbook.
 
I have used polleverywhere a couple of times and I LOVE it. It really is as easy as you say, you get results in real-time, and...bonus feature...the kids get to use their cell phones and I don't have to confiscate them!!! Seriously, I have used this as a tool to review for quizzes, and also as a formative assessment tool. It is great to use before starting a new unit or topic because I get a decent idea of where I need to start.
 
Great resources and wonderful ideas for using them in the classroom.
